Upon my resumption in CHI Limited, I was drafted to Chivita and Evaporated
milk departments to oversee to oversee the processing of fruit juice and
evaporated milk.

As an Assistant Production Manager, I ensure that product formulation,
processing temperature are strictly adhere to and at the end of the day
production, full cleaning-in-place (C.I.P) is carried out on the processing
equipment such as the product tank, syrup mixing tank, pasteurizer, product
line and concentrate unloading pump. Full C.I.P is also carried out on the
filling machine. Prior to production, the product line is sterilized at
95oc for 30 minutes. Also, the processing and filling temperature is
checked. All these are done to ensure that the finished products are free
from contamination.

In my capacity as the Production Manager, I carried out the Weighing and
blending of all the ingredients and ensure proper agitation to achieve
uniformity before the commencement of filling. I also ensure that the water
for production used is properly treated by allowing it to undergo aeration
to oxidize iron (ii) to iron (iii) addition of chlorine to destroy
microorganisms and passing the chlorinated water through Sand filter and
Carbon filter to remove any particulate materials and foreign
odour/residual chlorine respectively. I also ensure that daily production
target is achieved.


PRODUCTION SUPERVISOR
1ST JULY, 2001-MAY, 2003 SPECTRA NIGERIA LIMITED

production of Pineapple Juice,
Suco Cocoa beverage, Instant
Soya Flour, Beans Flour and
Sesame oil ).

As a production supervisor I oversee the production of pineapple juice
from pineapple fruit. Care is taken to remove bruised pineapple and fully
ripped pineapple to avoid unnecessary fermentation of the juice. After
extraction of the juice, it is filtered to remove pulp, pasteurized at 80-
85oc for 15 minutes to prevent fermentation, filled while hot to exclude
air, capped and sterilized at 100oc for 20 minutes. Finally, it is cooled
and packaged. I also oversee every aspect of Instant Soya Flour production
starting from grading of whole Soya, sorting, de-hulling, winnowing,
boiling, drying, milling and sifting.

I carried out back washing of the pressure filters (sand, carbon and ion-
exchange filter) before the raw water that has been treated with chlorine
and lime is allowed to pass through it. The treated water is analyzed for
PH, total dissolved solid, salinity and conductivity. The Willett coding
machine operation is done by me for coding of filling bottles.

to have water that is more pure than water that is normally available in
order to obtain a beverage with uniform flavour and high quality. In the
quality control department, I ascertained that the bottles are well washed
and rinsed before production could commence. At intervals, I carry out
analysis to determine the caustic soda strength used for washing bottles in
the washer.
